Ingredients:
1 small Yukon gold or red potato
2 tbsp finely chopped steamed broccoli
2 tbsp shredded cheddar cheese
1 tbsp plain full-fat Greek yogurt
Instructions:
Preheat oven to 375°F (190°C).
Microwave or boil the potato until fork-tender. Cut in half and scoop out a bit of the center.
In a bowl, mix the scooped-out potato, broccoli, cheese, and Greek yogurt.
Spoon the mixture back into the potato shells.
Bake for 10 minutes or until the tops are slightly golden.
Let cool and serve warm.
