Ingredients:
1 egg
1/4 cup cooked, diced potatoes
1 tbsp finely chopped spinach
1 tbsp grated cheese (optional)
1 tbsp milk
Olive oil for greasing
Instructions:
Preheat oven (or air-fryer) to 375°F (190°C).
Whisk egg, milk, and cheese. Add spinach and potatoes.
Pour into a small greased oven-safe dish (or mini muffin tin).
Bake for 15–20 minutes, or until set and lightly golden.
Cool and cut into toddler-friendly wedges.
