Ingredients:
1/2 cup cooked organic quinoa
1/4 cup grated zucchini (squeezed to remove water)
2 tbsp finely chopped organic carrot
1 tbsp finely chopped spinach
1 egg
1 tbsp shredded cheddar cheese (optional)
Instructions:
Preheat oven to 375°F (190°C).
Mix all ingredients in a bowl.
Spoon into mini muffin tin, pressing down slightly.
Bake for 15–18 minutes, until firm and golden.
Cool and serve warm or at room temp.
