Ingredients:

  • 1/2 cup cooked organic quinoa

  • 1/4 cup grated zucchini (squeezed to remove water)

  • 2 tbsp finely chopped organic carrot

  • 1 tbsp finely chopped spinach

  • 1 egg

  • 1 tbsp shredded cheddar cheese (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Mix all ingredients in a bowl.

  3. Spoon into mini muffin tin, pressing down slightly.

  4. Bake for 15–18 minutes, until firm and golden.

  5. Cool and serve warm or at room temp.
